Meet the Makers | Cyclic Beer
Cyclic’s story begins in Belgium, with the farmhouse beer, most commonly known as Saison.
Flavored with a variety of fruits herbs and spices, these beers were brewed for the seasonal farmworkers, french speaking and often referred to as “saissoniers”, hence the origins of the Saison.
Like the Saissoniers, Cyclic works in line with the seasons. They have developed their own interpretation of farmhouse brewing, breathing life into the tradition and inviting city dwellers to appreciate the experience. A slow artesian production process leaves room for the unexpected and the unique results that come with natural yeast. Cyclic’s yeast is a blend that they prepared at the start of the project, and recycled with each new fermentation. Their dedication to this artisanal process creates the depth of flavor that can only be achieved slowly, through a natural brewing process.
Sustainability is central to Cyclic's product sourcing. Their materials come from local organic farms, surrounding Barcelona and they have a family farm in Alt Empordà as well. Collaboration is a key aspect of Cyclic and working closely with local producers keeps them in touch with their ingredients, and with the seasons. Their unique flavor palettes have grown out of curiosity, and respect of material sets the quality of their product. The same environmental awareness is seen in their product design. Selling beer in a larger bottle, as one would sell a bottle of wine is a small shift but it is an important step to reducing packaging waste. A larger bottle is an invitation to a shared experience, and like wine, Cyclic’s crafted fermentations pair wonderfully with a gastronomic experience.
Coherence is a key value for Cyclic, and with coherence comes realism. Being a small-scale sustainable business in the current market is not the easiest of endeavors. More ethical production is often the slower route, but slow is what Cyclic does best. Slow-brewed beers, where the business is a healthy by-product, and quality is the center point.
Many times it seems we have stepped away from tradition in favor of a more efficient or economic business approach. The old ways are often slower, more variable, and less appealing to an attention-deficient urban market. We cannot bring back an idealized version of the past through reminiscence, rather an understanding of the past will shape our future. Rethinking what we consume, and where it comes from, is a good start. It is clear that product made with attention and respect to their origins is better, but it takes an initiative like Cyclic to make this vision a reality.
